Hummus

  • 2 c. cooked chickpeas (reserve the cooking water)
  • 1/4 c. tahini (from VC!!)
  • 2 T lemon juice
  • 2 T plain yogurt
  • 1-2 T olive oil
  • 2-6 cloves garlic
  • 1 T cumin
  • 1 t paprika
  • roasted red peppers, optional
  • To taste: salt, pepper, cayenne pepper

Blend all ingredients in a food processor or blender until smooth. Add the cooking water as needed to attain a good, smooth consistency.
