Pumpkin Cookies


Ingredients For  Cookies

  • ½ lb butter
  • 1 cup brown sugar
  • 1 egg
  • 3 cups all purpose flour
  • 2 tbs cinnamon
  • 2 tsp ginger, powered
  • 1 tsp fresh nutmeg, grated
  • Pinch salt
  • 1 tsp baking powder
  • 1 tbsp milk
  • 1 tsp vanilla extract

Ingredients For Icing

  • 1 cup powdered sugar
  • milk
  • orange food coloring


  1. Cream the butter and sugar together. Add in the egg.
  2. Combine the flour, salt, and baking powder in a bowl. Gradually combine the dry ingredients with the creamed butter and sugar. Add in milk and vanilla and combine.
  3. Shape the dough into a disc.
  4. These need to be refrigerated for at least two hours and as much as two days. You can also wrap them tightly and freeze.
  5. Remove from fridge and allow to warm slightly before rolling and cutting into shapes.
  6. Enjoy plain or with icing.

To make icing

Slowly dribble milk into powdered sugar mixing quickly until slightly grainy texture forms. Add food coloring until desired color it reached. Add more milk until icing consistency is reached.
