Housewarming Soup

1 c dried white beans, rinsed & picked over
1 1/2 tsp olive oil
1c chopped onion
2 cloves garlic, minced
3 small carrots, peeled & cubed (1 1/2 c)
1/2 lb swiss chard (or other greens) (4-5 cups)
1 rib celery, chopped
6 c broth
2 bay leaves
1/2 tsp freshly ground pepper
2 Tbs minced fresh parsley
1/2 tsp dried sage
1 tsp salt, to taste
2 Tbs grated Parmesan or Romano cheese
-Soak the beans in plenty of water for at least 4hrs or
up to 12. Drain
-Heat oil in a soup pot over low heat. Saute onions &
garlic in oil until soft & golden. Keep pot covered between
stirring.
-Add beans & remaining ingredients, except salt &
cheese, to the pot. Bring soup to boil. REduce to a
simmer & cook, covered 45 min to 1hr until beans are thoroughly cooked.
